I created an Insomnia plugin that lets you to export documentation directly from workspace UI based on the CLI tool here and it is available for installation at https://insomnia.rest/plugins/insomnia-plugin-documenter

I apologize for the small hiccups that happened there while running it 😅 A complete rewrite of the tool is in plans, which will be faster, more reliable and configurable, and statically generated at build time!
