[DOCUMENTATION]: Update XYO network link (404 error)

The XYO network link on the bottom of this page https://github.com/XYOracleNetwork/papers-xyonetwork#credits is broken (404 not found error) as it contains www. in the url which needs to be removed from the url for the link to work correctly.
